Homemade Air Fryer Sausage Rolls Recipe

Plain/all-purpose flour, for dusting

½ 500 g block of puff pastry (freeze the rest for another day)

1 tablespoon tomato puree/paste

1 teaspoon dried thyme

325g seasoned sausage meat (or remove skin from pork sausages)

1 beaten egg for gilding

Ketchup, to serve (optional)

Method

  1. Dust a clean work surface and rolling pin with flour. Roll out the puff pastry into a large rectangle measuring 30 x 20 cm. Cut the rectangle in half lengthwise to create two long strips of dough.
  2. Spread a layer of tomato puree over the central pastry strips (we find this is easiest to do with a pastry brush), leaving a 1cm space around the edges of each for egg wash . Sprinkle dried thyme over the puree.
  3. Divide the sausage meat into two portions and spread each into a 30 cm long sausage shape. Place a sausage along the entire length of each strip of dough.
  4. Brush the bare edge of the pastry with egg wash, then fold the pastry over to form a long sausage roll. Crimp the edge of the log with a fork to seal it, then repeat to fold the other roll. Use a sharp knife to cut each sausage roll in half to make four large sausage rolls, then make several small cuts in the top of the rolls so steam can escape while cooking.
  5. Carefully place the sausage rolls into the air fryer basket/drawer, spreading them out. I can normally fit four sausage rolls in one basket, or two in each double drawer. Brush the tops of the rolls with egg wash.
  6. Set the temperature to 180ºC and cook for 10 minutes. Brush them with a little more egg wash, then cook for a further three minutes, or until cooked through and golden brown. Serve warm or cold – they are delicious with ketchup.

Making Party Rolls If you would like smaller sausage rolls for a party, simply cut them smaller. Once you’ve quartered them, cut each one into quarters to make 16 group-sized rolls. If you’re making sausage rolls, a total heating time of eight minutes will be perfect.
