All for the love of Desi Panjeeri
Time and again, actor and singer Ayushmann Khurrana has revealed his love for food, especially Punjabi food. On Sunday, the actor shared a post on his Instagram account with a bowl of Panjeeri and a photo from celebrity chef Ranveer Brar’s cookbook, A Journey Through India!
He also expressed his love for the dish and also captioned the photo as “Panjeeri and Ranveer Brar’s recipes” and added a heartfelt “Thank you, paaji”, with a happy emoji. While netizens loved the post and expressed their love for this desi delight made during the winter season. Let’s take a look at what exactly Panjeeri is and what makes it so special.
What is Panjeeri?
Panjeeri is a Traditional North Indian sweet treat prepared by mixing whole wheat flour in ghee with jaggery/sugar, cardamom powder and dry fruits and nuts such as cashews, almonds and raisins. This delicacy is often enjoyed during this season due to its warming power which helps to strengthen immunity and resist the harsh weather. How to make Panjeeri at home
Ingredients:
1 cup whole wheat flour, 1/4 cup ghee, 1/4 cup jaggery or powdered sugar, ½ cup chopped mixed nuts, ½ cup chopped dry fruits, 1-2 tsp. fennel, 1/2 teaspoon cardamom powder, 1 pinch saffron, 1-2 tablespoons melon seeds or pumpkin seeds, 2 tablespoons desiccated coconut soup
Step 1
To start this easy recipe, heat a non-stick pan or kadhai over medium heat. Add the whole wheat flour to the pan and dry roast over low to medium heat, stirring constantly.
Step 2
Roast until the flour turns golden brown and releases aroma. This should take around 10-12 minutes. Turn off the heat and make sure not to burn the flour. In the same pan, heat the ghee. Once hot, add the fennel seeds and fry for about 30 seconds until they begin to release their flavor.
Step 3
Add the chopped nuts and fry for a few minutes until they turn golden and slightly crispy. Then add the seeds and mix them as well. Add the dried fruits and fry for another 1-2 minutes until the dried fruits soften a little. Reduce the heat and add the toasted whole wheat flour to the pan along with the ghee and nuts.
Step 4
Mix well to combine the flour, ghee and nuts mixture. Add the cardamom powder, nutmeg and saffron sprigs. Mix everything well and add jaggery/sugar. Stir to combine and cook for another 2-3 minutes until the mixture becomes slightly sticky and everything is well combined. Finally, add desiccated coconut at this point, continue stirring for 3-5 minutes, turn off the heat and transfer to a bowl; let cool and enjoy!
