Ingredients: Bone-in chicken – 8 pieces (drumsticks and legs), salt – 1 tbsp and to taste, smoked paprika – 1 tbsp, ground white pepper – 1 tbsp, garlic powder – 1.5 tsp , ground ginger – 1.5 tsp, celery salt – 1.5 tsp, ground black pepper – 1.5 tsp, ground mustard – 1.5 tsp, dried thyme – 1 teaspoon dried basil – 1 teaspoon, dried oregano – 1/2 teaspoon, flour – 1.5 cups, cornstarch – 1 tablespoon, buttermilk – 1 cup, egg whites – 2, vodka – 2 tablespoons; vegetable oil for frying

Method: Salt the chicken and let it sit at room temperature for about 30 minutes. Mix all the remaining spices and rub over the chicken. Mix the flour and cornstarch with a little salt while you whisk together the buttermilk with the egg whites and vodka. Dip the chicken pieces into the wet mixture, then dredge them in the dry mixture. Let sit for 10 minutes before frying in hot oil.

Ingredients: For the crust – Graham crackers – 190 g, sugar – 35 g, melted unsalted butter – 35 g; For the cheesecake — Whole cream cheese – 4 blocks, granulated sugar – 1.5 cups, salt – 1/2 teaspoon, vanilla essence – 1 teaspoon, large eggs – 4, heavy cream – 1/2 cup, sour cream – 1 cup, cornstarch – 1 tbsp, lemon juice – 2 to 3 tbsp

Method: Preheat the oven to 160°C. Grind the crust ingredients, then stir in the butter to achieve a sand-like texture. Place it in a buttered mold and bake for 8 minutes. Whisk cream cheese, sugar, salt and vanilla for 3 to 5 minutes, until creamy. Break the eggs with a whisk, followed by the rest of the ingredients. Spread it on the crust and bake for 75-80 minutes in a bain-marie. Let cool for 15 minutes before serving.
