Soak the fruit:

Black grapes 25g

Brown grapes 25g

Green grapes 25g

Nuts 35g

Orange juice (to cover)

Soak for 24 hours for some festive magic!

Plum cake | Cloth

Dry mix:

Gluten-free flour 140g (1 cup)

Salt 1/4 teaspoon

Cinnamon 1/2 teaspoon

Clove 1/4 teaspoon

Nutmeg 1/4 teaspoon

Ginger 1/2 teaspoon

Baking powder 1/2 teaspoon

Baking soda 1/8 teaspoon

Wet mix:

Butter 100g

Orange juice 75g

Brown sugar 1 tablespoon (or date powder)

Molasses 50g

Condensed milk 140g (1/2 cup)

Lemon zest (1/2 lemon)

Orange zest (1/4 orange)

Plum cake | Cloth

Steps to follow:

Melt the butter, juice, sugar and molasses. Cool.

Add the soaked fruit, condensed milk and zest.

Mix the wet ingredients with the dry ingredients, adjust the consistency with the soaking juice.

Bake at 150°C for 1 hour in a 9×3″ lined baking dish.

Check for doneness with a toothpick.
