Aldi’s ‘don’t be afraid’ Christmas leftover recipe to end 2024 well

Who still eats Christmas leftovers? I’m sure we’re not the only household on Merseyside that still has enough Christmas food to feed a small army in our fridge.

Like me, many people are now running out of ideas for different ways to enjoy Christmas leftovers. Well, with time running out, Aldi has thankfully shared its recipe for making the most of those leftovers and it’s a healthy salad dish for those who want to end 2024 right and start the new year off right.

The discount retailer shared a recipe on its Instagram for Potato Salad with Christmas Leftovers and it looks delicious. Some shoppers have already called this dish a “new favorite.”

In a video on its Instagram, Aldi shared the method, which uses its sage and onion flavored mayonnaise, which shoppers have gone “crazy” for. You simply add the mayonnaise to a dish with some bacon bits, leftover sprouts, pomegranates and of course leftover roast potatoes. To serve, mix everything together and that’s it.
