Katie Lee Biegel Just Shared a Butternut Squash Soup That’s ‘Comfort in a Bowl’

It’s “so comfortable” and “so easy”, what more could you ask for?

Soup is perhaps the most comforting dish you can make. It’s warm, cozy, and can be filled with satisfying ingredients for a complete meal. Katie Lee Biegel just shared a simple soup recipe that uses fall produce, and she says it’s “comfort in a bowl.”

“Honestly, it’s so simple.” The kitchen the star says in her recent video showing how to make this vibrant soup. Using minimal ingredients, here’s how to make this fall butternut squash soup recipe.

Shared in her newsletter, all you need to make this soup is butternut squash, apple, yellow onion, low sodium chicken broth, garlic, thyme, bay leaf, salt , pepper and olive oil. You probably already have at least half of these ingredients on hand. Biegel also recommends topping each bowl with your choice of Greek yogurt or sour cream.

On a baking sheet covered with parchment paper, Biegel adds his cubes of squash, his apple (cut into sixths) and his onion (cut into sixths). Coated with salt, pepper and oil, she roasts the produce in a 400ºF oven for about 45 minutes, until each piece can be easily pierced with a fork.

Once ready, in a large pot, Biegel simmers his chicken stock before adding thyme sprigs, a bay leaf and garlic. Then she throws in her roasted vegetables and apple and lets the pot simmer for about 15 minutes. For a creamy soup, she removes the thyme and bay leaf before putting everything in a blender.

Blended until creamy, she recommends seasoning the soup with salt and pepper, then it’s time to start serving. Biegel ladles the soup into each bowl and drizzles Greek yogurt on top before serving. It’s easy to stir in the yogurt to get a nice creamy bowl.

It’s all it takes to recreate, and we love using sheet pan roasted produce for enriched flavors. Using butternut squash and apple provides a delicious source of fiber that is filling and also great for heart and gut health.
