Ingredients

Cream cheese 1kg

Egg white 4nos

Egg yolk 4nos

Corn flour 60 g

Milk 70ml

Fresh cream 225g

Sour cream 200 g

Method

In a medium mixer fitted with a paddle attachment, combine cream cheese, cornstarch and sugar.

Cream for a while until the mixture is light and fluffy.

Slowly add the whole eggs and continue to cream.

Add the sour cream and finally the heavy cream.

Cream a little more.

Arrange the mold or cake ring made from cookie crumbs

Filter the mixture and pour it into well-buttered cake molds.

Bake at 160 C in a bain-marie for almost 1 hour.

Cool, unfashion and refrigerate.

Once the cake has cooled, garnish the top with strawberries.

Brush the top with the boiled apricot glaze.

Ingredients

Semi-sweet chocolate 400 g

Butter 8 each

Fresh eggs 160 g

Sugar 113 g

Flour-113 g

Vanilla essence 1 cup

Method

1. Melt the chocolate and butter together (make sure the butter and chocolate are melted together – do not melt the chocolate first)

Do not overheat the chocolate (maximum tempering temperature 31°C).

2. Mix half of the fresh eggs and sugar, whisk for a few minutes, then add the flour.

Whisk for a few minutes then add the rest of the fresh eggs.

3. Add the egg mixture above to the melted chocolate mixture.

Pour 120 g of the mixture into each ramekin.

4. Cook in a bain-marie in the oven at 160 C° for 25 to 35 minutes (be sure to cook over low heat).

Dark chocolate -500g

Thick cream – 200 g

Liquid glucose – 10 g

Orange zest -1 g

Melted dark chocolate -100g

Rainbow Sprinkle -100 g

Method

Boil the cream and add the chopped chocolate, mix well

Remove from the pan and strain well. Leave to rest for 6 hours in an air-conditioned room.

Take the truffle mixture, make a ball of 15 g each

Coated in melted dark chocolate and topped with rainbow sprinkles
