Instant Pot Wild Game Deer – so tasty | News, Sports, Jobs

Instant cooking has made meal preparation quick and easy, even with game considered difficult to cook – spices and pressure cooking only add to the difficulty and enhance the flavor. Photo courtesy of Forrest Fisher

Venison can often get a bad rap from those who don’t know how to prepare this low-fat, low-calorie, high-protein, high-nutrient wild red meat. An unpleasant taste can come from venison processors who are too eager to remove strips of venison fat which can make venison slightly rancid during freezer storage. So if you have steaks and roasts with easy-to-remove silver skin (tendon) and venison fat, simply cut them up and proceed before cooking. We will share several recipes in the coming days. Here’s a delicious ground venison recipe that everyone can enjoy with very little prep time: Instant Pot Venison Spaghetti.

Ingredients:

≤ 1 to 1 ½ lb to make meatballs (mix 60 to 40 g of ground venison/ground pork), or simply to make ground venison burger meatballs.

≤ 3 tablespoons olive or avocado oil

≤ 2 cups (16 oz) chicken broth (regular or low sodium)

≤ 1 lb (16 oz) spaghetti noodles

≤ 1 can (28 oz) tomato sauce

≤ ½ cup sweet white onion, chopped

≤ ½ cup sliced mushrooms, fresh portabella

≤ 2 teaspoons minced garlic

≤ 1 cup very thinly sliced celery

≤ ½ teaspoon thyme

≤ ½ teaspoon rosemary

≤ ½ teaspoon of salt

≤ ½ teaspoon black pepper

≤ 1 small can (15 oz) diced tomatoes

To prepare: In a 6 quart Instant Pot, in this order, place the trivet on the bottom and add the meatballs on top of the trivet, add the chicken broth, then break the noodles in half and crisscross the noodles. Between about five layers of noodles, add the mixture of onions, garlic, salt, pepper, thyme and rosemary. Add the diced tomatoes to the top of the pile. The pot is quite full but will shrink with heat before the noodles absorb and expand. Cover the Instant Pot. Cook under pressure for 10 minutes. When finished, turn off the power to the Instant Pot. Leave to release naturally (about 10 minutes). Remove the cover safely. Use a wooden spoon to mix everything together and let sit uncovered for 10 minutes. The sauce will thicken and blend the flavors even more. The noodles will melt on your fork. Makes approximately 10 adult servings. Add cheese or garnish as desired on the final platter.

Note: Instant Pot gadgets are simply modern, user-friendly pressure cookers. Be sure to follow the instructions for your Instant Pot brand. The recipe above will work with all brands. We have the Duo Evo and the Duo Evo Plus Instant Pot in our kitchen; we like these models because of the built-in safety factors. They work pretty much the same, except the plus model is digital.
