Moringa Thogayal

Ingredients: Moringa leaves – 2 cups, grated coconut – 1/2 cup, green chillies – 2 to 3, coconut oil – 1 tbsp, mustard seeds – 1 tsp, urad dal – 1 tsp, chana dal – 2 tsp, hing – a pinch, curry leaves – a handful, tamarind paste – 1/2 tsp, salt to taste

Method: Wash the moringa leaves well and let them dry. Meanwhile, heat coconut oil in a pan and add mustard seeds and dals. Once they start to splutter, add the chillies, hing and curry leaves followed by the coconut. Now add the moringa leaves and cook until they wilt. The tamarind paste goes last followed by a good blitz of the mixture once cooled.

This flavor-packed chutney will accompany literally everything you snack on, from your evening treats to your full daily meals.
