You say poh-tay-toe, I say poh-tah-toe… pan? Yes! Martha Stewart has reinvented the beloved root vegetable in casserole form — and no matter how you say it, it looks amazing. The domestic diva has been wowing us with her stunning cake recipes lately, but now she’s bringing us a different kind of treat: the ultimate brunch crossover in the form of a gargantuan hash brown and potato hybrid in the oven loaded. Stewart calls it a broccoli-cheddar hash brown casserole. We call it “paradise”.

On December 8, Stewart posted the recipe on his Instagram with the caption: “Here’s a riff on a Swiss rösti, where the potatoes are fried then baked. In this casserole version, you add broccoli, eggs, and a mixture of cheddar, Dijon, yogurt, and green onions. Like Hannah Montana, this cheesy casserole embodies the best of both worlds – in terms of potatoes in particular. Although it tastes like a baked potato topped with “the works,” it doesn’t get soggy or mushy, retaining the flavor and crunchy texture of a perfectly crispy hash brown. The mouth-watering meal, originally published in the December 2016 issue of Martha Stewart Living, was posted on Stewart’s IG account; the caption suggests finishing each slice with a dollop of Greek yogurt, a little bacon, and a sprinkling of chopped green onion “for a flavorful meal that can truly be enjoyed any time of day.” Yum!
