Grow spring onions for my tasty potato salad recipe: Kem Ormond’s vegetable garden

The mild, sweet flavor of spring onion is very different from its bigger brothers, brown, red and shallot.

This vegetable is a reliable source of vitamins A, B and C and you can use the green tops and bulbs.

These are actually onions, harvested before a large bulb has a chance to form and can be eaten cooked or raw.

Planting

Spring onions like a sunny position in well-drained but moist soil.

It pays to feed your soil with a slow-release fertilizer or prepare it with homemade compost or sheep pellets.

I like to use old six-pack seed containers, adding half a dozen seeds to each cell.

This makes them easier to divide when planting and avoids having to thin them out – my least favorite.

If you decide to plant directly in your beds, create furrows about 6mm deep and sprinkle the seeds in them.

Then lightly cover the seeds with another layer of compost and press down gently.

After 10 to 14 days, you will need to thin out the seedlings by gently removing them from the soil where they are growing too close together and replanting them in other parts of your garden.

Space 5 cm between each plant and 15 cm between each row.

Spring onions are perfect in Asian dishes and to decorate summer dishes.

This needs to be done so that you have more space for your spring onions to grow. Additionally, it allows for better air circulation between plants, reducing the risk of disease spread.

It is also helpful to change your flower beds every year, as this will help control pests and diseases.

You should plant new crops at 3-4 week intervals if you want year-round plants.

Some regions can grow spring onions all year round.

I’m on the west coast of the North Island and grow them for eight months of the year, although I could grow them in a pot in a sunny, warm, sheltered location and have them 12 months of the year.

Spring onions are ready to harvest in eight weeks.

I always pull out the whole plant when it’s ready to use, but I have friends who cut off the base and leave the roots in the soil to regrow.

Pests and diseases

Aphids, thrips and downy mildew are all pests and diseases to be wary of.

Keep your plants well fed and don’t let them dry out, this will help them stay healthy.

Delicious potato salad recipe

Spring onions can be used in many dishes, such as salads and Asian cuisine, or to add decoration to a dish.

However, my favorite recipe is my potato salad recipe.

Ingredients

1 kg potatoes (small waxy potatoes are nice because they can stay whole.)

3 spring onions, finely chopped

2 tablespoons whole capers

5 small pickles, finely chopped

1/3 cup chopped parsley

6 slices prosciutto fried until crisp and broken into pieces

Bandage

½ cup mayonnaise

½ cup sour cream

2 tablespoons of lemon juice

2 teaspoons whole grain mustard

Salt and black pepper

Cook the potatoes.

Drain them and refresh them under cold water so they don’t continue to cook.

Gently mix the potatoes, spring onions, capers, gherkins and parsley in a bowl.

Whisk dressing ingredients until smooth.

Add the dressing to the bowl and gently turn the potatoes to coat.

Serve topped with prosciutto.
